Incentivio’s Kitchen Capacity features offer restaurants enhanced control over their order management by allowing dynamic adjustments based on order size and kitchen capacity. These tools help optimize kitchen operations during peak times and ensure accurate customer expectations for order prep and pickup or delivery. The two key features within this section—Preparation Time and Order Limits—enable restaurants to tailor preparation times for large orders and limit the total value or volume of orders that can be processed within a specific time frame. This article provides an overview of how to set up and customize these features to suit your restaurant’s needs best.

Preparation Time
This allows restaurants to adjust their prep time dynamically based on the size of individual orders. For example, larger orders (like those over $250) may require more preparation time, so setting this up in advance helps to set proper expectations for customer pickup/delivery time.
To adjust these settings:
- Navigate to Locations and select the desired location.
- Select the Kitchen Capacity section.
- Click on the weekly calendar under the Dynamic Preparation Time tab to add a new field.
- Select whether these settings apply to Pickup and/or Delivery and which days of the week and time of day they apply to.
- Enter the minimum basket value and applicable prep time.
For example, if the standard prep time is 15 minutes, but it takes 30 minutes to prep orders over $100, set the dollar value to $100 and the prep time to 30 minutes. - To add additional rules for the same time slot, select Add Value Condition.
Here is an example of what this might look like: - When you are done adding additional conditions, click Apply, then Save to apply these changes.
Order Limits
This helps restaurants manage kitchen capacity by limiting the number or value of orders they can prepare within a 15-minute period. As time slots fill up based on set thresholds, customers are prompted to choose the next available time for their order.
To throttle prep time based on kitchen capacity:
- Navigate to Locations and select the desired location.
- Select the Kitchen Capacity section.
- Click on the Order Limits tab.
- Click on the calendar to add a new order limit rule.
- Select whether you want to control order limits by Value and/or Volume.
- Set the maximum value and/or volume that the team can prep in a 15-minute period, along with which days of the week and times of day this applies to.
For example, if your team can prep $200 worth of orders every 15 minutes from 10:00 AM - 3:00 PM on weekdays, set the rules as seen below:
Once the total value of orders for that 15-minute time period reaches $200, it will be considered "closed" for orders, and customers will not be able to place more orders for this pickup time. They will instead see the next available pickup time, and as time slots continue to "fill up," customers will be prompted to select the next available time. - Once these rules have been set, click Apply, then Save to apply these changes.
